Seattle's 727 Pine Serves up Decadent American Kobe Beef

(Boise, ID) - As luck would have it, Snake River Farms was doing a cutting of its American Kobe Beef at Seattle's Grand Hyatt for Costco's worldwide buyers last summer. Following the demonstration, sales manager Shane Lindsay gave the leftover product to the hotel's premier restaurant, 727 Pine. The chef de cuisine, Kyle Nelson tried it and was hooked!

727 Pine now features the entrée, Snake River Farms American Kobe Beef in Pan Seared Wild Mushroom Fricassee and Aligot Potatoes, for $35. Nelson charcoal grills and thinly slices a seven-ounce flat iron cut, and pairs it with a fricassee of seasonal mushrooms, baby turnips and leeks in a red wine reduction. Completing the presentation is a heavenly serving of potatoes "Aligot", made with Cantal cheese and whipped potatoes, served on the side in a copper sauce pot.

Snake River Farms American Kobe Beef fits with Nelson's goal for 727 Pine to be an innovator of culinary trends while working to demystify the fine dining experience making it more approachable and fun. Nelson wants to introduce his guests to new ingredients that they probably wouldn't think of using at home.

The restaurant sells approximately two cases per week on average, but a recent citywide promotion called "25 under $25" nearly tripled this figure. The promotion, where 25 restaurants offer a three-course dinner under $25, featured a five-ounce portion of Snake River Farms American Kobe Beef for $25.

727 Pine is a multi-venue 210-seat restaurant located within the Grand Hyatt Seattle, a 425-room luxury hotel in the heart of Seattle. For guests and locals alike, 727 Pine serves "Northwest Inspired" cuisine on four descending levels of fluid elegance, as a team of master sommeliers perfectly pair dishes with selections from a comprehensive wine list.

Compared to ordinary beef, Snake River Farms American Kobe Beef is more tender, perfectly marbled, and richer in flavor. This level of tenderness and flavor begins where USDA Prime stops. In fact, the USDA grading scale ends where Snake River Farms Black and Gold grades begin - far above prime.
