Here are the magic numbers you’ll need to determine when your steak is cooked to the degree of doneness you most prefer. The internal temp is when the steak should be removed from the heat. The steak will continue to cook so the temperature will rise during the rest period.

Rare Red center, very cool 110°F
Medium Rare Red, warm center 120°F
Medium Pink throughout 130°F
Medium Well Pink center 140°F
Well No pink Not recommended

    Beautiful cut of meat and impressive looking. But consistency and flavor were not very impressive. Tried this cut (Cowboy) on two separate occasions and was underwhelmed both times.

  • Favorite Cut

    I will have to admit this is my favorite cut ever. The hesitation of ordering online had me until I finally ordered these bad boys. All I can say is WOW!! You can check them out at chef_litty on instagram ( I am not writing these reviews to promote myself, I just know as a consumer I wanted proof of how amazing these cuts were and when I finally ordered them let's just say it was on my thanksgiving thankful list. DELICIOUS

  • Cowboy Steak - Prime

    I ordered this steak for my 8 year anniversary family dinner, that was to share with my two daughters, ages 2 and 5, both loved it. I really enjoyed it, I had never had a steak that thick and really thought it was gimmicky, I wanted to cross it off my list so to speak. After ordering it I now can say I was wrong, I plan on ordering this steak again, no gimmicks. I seared it for 4-5 minutes a side in butter, red wine, and thyme them I finished it in my oven until it was a perfect 130.

    I can't wait to order another. If you're on the fence about this cut, order it, it is a great steak.

  • Great Cowboy Steak

    I recently discovered Snake River Farms, and have tried several cuts of their beef.

    My new favorite online source for prime and waygu meat.

    This steak, like all the others are some of the best steaks I have had.
