Unlike non-heritage breeds, Snake River Farms pork is a striking crimson color which chefs and food scientists acknowledge is a true indicator of high quality pork. These are hand cut and trimmed with the bone exposed for a stunning plate appearance. Serve these chops simply grilled or prepared with a classic stuffing.

Please note there can be some variation in size with our natural pork chops. Each bone-in rack contains 10 to 12 bones. We hand-cut each chop to include a bone and the normal taper of each rack can translate to some chops that are larger than others. We specify a minimum size of 5 oz. and the chops can go up in size from that target weight.

    Great chops. I brined them for about 7 hours. Grilled them on the barby to a tempt of 145. These chops were tender and juicey. Awesome!!! I thought at first that they looked a bit small and that I should of cooked 2 per person, however, I found that one was enough. Highly recommend!!!

  • A bit thin

    While the pork chop was delicious, it was cut a bit too thin at 3/4 inch. It would have been better sliced at 1-1 1/4 inch thick..

    You can not find Pork like this in a grocery store. Kurobuta pork is a totally different animal. Outstanding texture & flavor!
