  • best brisket ever

Prepared three of these. Always a revelation - rich, unctuous - even the next day. Trimming of the hard fat required so sharpen a knife

I had been looking forward to this for months. I’ve cooked dozens of briskets that I’ve gotten from my local markets but this was going to be special. I’ve been watching YouTube videos on how to prepare and cook the SRF brisket, had my big green egg cleaned and ready, and even purchased a new digital thermometer for it. In the end the meat was so much fattier than anything I’d ever cooked, and it can off just tasting and feeling greasy, compared to conventional brisket. So I am sadly disappointed.
