Filet Mignon Roast

The Snake River Farms center cut tenderloin, or Filet Mignon Roast, is an even size roast from the heart of the tenderloin and is perfect when uniform portions are desired. This luxurious tenderloin roast is the perfect centerpiece for any celebration or special occasion. Each tenderloin roast shares the same buttery texture and delicious mild flavor as our top selling filet mignon steaks. Gently marbled, each center cut roast is naturally low in fat, but has a mild flavor that is almost addictive. Our tenderloin roasts are extremely versatile and can be roasted whole or cut into filets.

Due to the unique conformations of this product, approximate weights can vary up to +/- 0.5 pounds.  

Roast Temperature Guide

Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

Rare Red center, very cool 110°F
Medium Rare Red, warm center 120°F
Medium Pink throughout 130°F
Medium Well Pink center 140°F
Well No pink Not recommended

  • Super Bowl perfection

    Cut the 1/2 roast in to 4 6-7 oz Filets. Grilled to medium rare.... a real hit at our Super Bowl dinner with family!

  • Magnificant piece of meat!

    Have to admit was skeptical paying so much for a piece of filet. I usually buy the Costco prime filet and rib eye.
    I must say this was a piece of heaven! Seared in butter and baked 350 for approx 4 minutes (we like our meat mooing). De glazed the pan with Marsala wine, more butter, onions and mushrooms. Highly recommend SRF!!
