Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

    What i can say the taste was very good. N.Y. Strip classically has a nerve that goes through part of that part of the cow. If you get that part the nerve is tough. I would regardless recommend the roast to anyone know there can be sections that are naturally tough. We would buy it again.

  • Manhattan Roast

    Added this to our Easter Dinner menu and wow; this is a beautiful marbled roast that delivers!

    After seasoning the Manhattan Roast with olive oil, kosher salt, fresh ground pepper, rosemary, and thyme I smoked the roast for about 50 minutes at 325 degrees in my Humphrey's smoker. Pulled the roast when the internal temp hit 125 degrees and let stand for 15 minutes before slicing. I should note that the roast weighed 3.54lbs.
