Roast Temperature Guide

Here are the magic numbers you’ll need to determine when your roast is cooked to the degree of doneness you most prefer. The internal temp is when the roast should be removed from the heat. The roast will continue to cook so the temperature will rise during the rest period.

    Simply put this very generous size whole tenderloin was the best meat we have ever tasted. It made our Christmas Eve not only special but also easy. I used the Ina Garten method where I cooked it in a 500 degree oven for 25 min for medium rare and than tented it. It came out perfectly. I made a Gorgonzola sauce to go with it as well as Yorkshire pudding and asparagus. We don’t think we can wait until next Christmas to order another one. It was that good.

  • The Best Beef

    Bought a whole tenderloin and cut about half of it to roast as the main course in a New Year's Eve dinner party. Prepared it as in the video (seared outside in cast iron skillet, then roasted for about 45 minutes). Turned out great. The foodie brother-in-law said it was the best beef he ever had (agree). Cut remainder into 6 oz filets that I vacuum sealed and froze, so I can enjoy it again over the next several months.
